Guava Strawberry Pie (Pastel de Guayaba y Fresas)
Incorporating Cuban and American flavors and styles, this pie really is "the best of both worlds." Sweet, fruity, and comforting. It is everything a pie should be.

2x 9-inch pie crusts for one double-crust pie [Here's my personal favorite recipe ] 3 tbsp cornstarch 1 tsp cinnamon 3/4-1 cup cup sugar depending on the sweetness of your fruit 2 cups of strawberries cut into 2-4 pieces 2 cups of guava peeled, seeded, and sliced into 1" x 1/2" pieces 1 tbsp fresh lime juice
Preheat your oven to 425 degrees.
In a small bowl, combine the cornstarch, sugar, and cinnamon and mix well.
In a medium bowl, mix up your fruit and lime juice.
Add your sugar mixture to your fruit, and stir to combine. Set aside.
Line your pie dish with one of your pie crusts and blind bake it for 10 minutes. Pull it out of the oven and pour your fruit mixture into it.
Place the second crust over the pie and cut a few slits into it.
Lower the oven to 400 degrees, and place the pie in the oven.
Bake at 400 degrees for 10 minutes, then reduce heat to 350 and bake for 30-35 more minutes, until crust is a golden brown.
