
We are in that strange middle happy place between Spring and Summer… where it’s beautiful out and the flowers abound, and it feels like each day is just too full of beauty to be real. And yet… the evenings are growing warmer, the birdsong is growing louder, and the smell of summer storms comes and goes. This time of year, my mind is full of flowers.

I want to take part in their beauty, and let them be a part of our daily routines, too. It is from early Spring and into this middle-almost-summer time that drinks like a Lavender White Mocha really shine. It is warm, creamy, comforting. Never overly sweet, and yet the floral touch makes you feel a bit dreamy and like you are somehow taking part in all the beautiful chaos outside.

Every so often, I throw a recipe together, and it is a winner from day 1. This is one of those recipes. From the first time we made it, we knew it was a keeper. And so it has been – a repeat request for months. I hope you enjoy it, too!

Lavender White Mocha
Ingredients
- 1-2 tbsp white chocolate sauce, recipe follows
- 2 drops edible lavender extract *I use Angel Bake brand, linked below
- 1-2 shots pulled espresso
- 3/4 cup whole milk, steamed *or your preferred milk alternative
Instructions
- Pour your white chocolate sauce and espresso in the base of your cup and stir thoroughly. Add your drops of lavender.
- Pour in your steamed milk, and garnish as desired.
Notes

White Chocolate Sauce (for Drinks)
Ingredients
- 3 oz good quality white chocolate chips *I use Ghirardelli chips
- 7 oz (3/4 cup + 2 tsp) evaporated milk
- 1 can sweetened condensed milk *I like La Lechera brand
- 6 tbsp granulated sugar
- 1/2 tbsp vanilla extract
Instructions
- Mix chocolate chips and a couple of splashes of your evaporated milk in a small saucepan over med-low heat. Stir constantly so your chocolate does not burn as it heats.
- Once your chocolate is fully melted, add all of the remaining ingredients except the vanilla. Raise your heat to medium. Stir until the sugar is fully melted, then remove from heat.
- Pour in your vanilla extract, and stir to combine.
- Pour your white chocolate sauce into an airtight glass jar and store in the fridge or freezer. The sauce freezes perfectly and will last for months in the freezer.
